The Chiang Mai Grand Canyon is a worked-out quarry about seventeen kilometres south of the city, at Hang Dong, that filled with water once the digging stopped. The result is a set of sheer ochre walls dropping into green water, which looks nothing like the rest of the province and is a great deal more photogenic than its origins suggest. Most people go there to jump off things. This booking goes there to cook, which is a better use of the view.
The class is seven dishes, which is more than most half-day courses attempt, and it starts with a market tour for the ingredients rather than handing them to you pre-chopped. Seven is a real number here: it means you leave with a spread rather than a party trick, and it means the pace is brisk. You cook, you plate, and you eat by the water, which is the part that separates this from cooking in a shed behind a car park.
Five hours door to door, transfers included, twenty-five euros, and only one hour of booking notice required. That last figure is the quietly useful one: this is a class you can decide on over breakfast. Against the other classes on this site, the trade is legible. You get the most dishes and the best setting, and you give up the farm, the herb garden and the sense of having been somewhere agricultural. Whether that is a good trade depends on whether you came to learn where food grows or to learn how to make seven things.
Most people go to the quarry to jump off things. Cooking above it is a better use of the view.
Shopping for the seven dishes before cooking them. The stop that answers the question you will have at home in front of a supermarket shelf.
Seventeen kilometres out of the city to a quarry that filled with water when the digging stopped. Ochre walls, green water, nothing else like it nearby.
Cooked by you, at a brisk pace, with the canyon in front of the kitchen. A repertoire rather than a showpiece.
Eating what you made on the rim. It is the reason to cook here rather than in a room behind a car park.
01
More than most half-day classes attempt. You leave with a spread you could actually put on a table, not one showpiece.
02
Ochre walls dropping into green water, seventeen kilometres south at Hang Dong. It looks like nowhere else in the province.
03
The ingredients are shopped for rather than handed over pre-chopped, which is where the identification problem gets solved.
04
The shortest booking window of any cooking class here. A decision you can make at breakfast and act on by lunch.

Market, seven dishes, the meal and the drive both ways. The setting costs nothing extra.
A quarry at Hang Dong, about seventeen kilometres south of the city, that filled with water when the excavation stopped. The walls are sheer and ochre, the water is green, and the whole thing is entirely man-made, which nobody minds once they see it. It has since become a water park; this class uses the setting rather than the slides.
It is brisk, and it is honest about being brisk. Five hours includes the drive both ways and a market tour, so the cooking itself is efficient. If you want to linger over four dishes and be told stories between them, the farm classes are the slower format. If you want the widest repertoire for the least time, this is it.
Not as part of this booking. The canyon operates as a water park with its own admission, and staying on is a separate arrangement rather than an included extra. Ask on the day if you want to; do not assume the vehicle will wait.
Most dishes and best view, least agriculture. The old city class is shorter, cheaper and centred on a herb garden; the market-and-farm class puts you on an organic farm and goes as long as a full day; the cooking farm class runs six hours and offers an evening slot. This one is the five-hour, seven-dish, one-hour-notice option.
Yes, before the cooking. It is the part that solves the problem most people take home with them, which is not technique but identification: which basil, which lime leaf, which of four near-identical roots the recipe actually means.
The cooking area is; the canyon rim largely is not. Between roughly eleven and three the sun there is unforgiving, so bring a hat and expect to want water beyond what is on the table.
